This really is the best way to cook kippers - the bacon and tomatoes add a sweet contrast to the rich saltiness of the fish. If really hungry - add a fried egg!
Ingredients

50g (2 ox) softened unsalted butter

2 whole kippers
-
4 rashers of dry-cure back bacon

2 medium tomatoes cut through the middle

salt and freshly ground black pepper
Directions
Under the Grill
Preheat the grill to its hottest setting.
Line the grill pan with foil and set the rack inside. Lay the kippers flesh side upper-most and dot generously with butter. Season with plenty of black pepper and drape the bacon over them. Place the tomato halves cut side uppermost beside the kippers, drizzle with a little olice oil and season well with salt and freshly ground black pepper. Place under the grill and grill for 2-3 minutes. Remove from under the grill and turn the bacon over then replace under the grill and cook for a further 3 minutes. Everything is now ready!
In the Aga
Grilling is done in the roasting oven
Use the grill rack in the roasting pan, which you have lined with foil. Arrange the kippers, butter, bacon and tomatoes on the rack as above. Hang the roasting pan from the highest set of runners, close the door and cook for 6 - 10 minutes - timing is very variable - about 3 minutes each side for thin bacon and up to 7 minutes each side for thicker cuts should do it!
