Light Smoked Salmon with Cous Cous Parcel
Ingredients

1 Par Smoked Cutlet (Plain)

Chopped vegetables (small)
-
Half a clove of garlic (optional)
-
Pinch of finely diced Chilli (optional)

2 tsp Couscous
-
Olive Oil
-
1 tablespoon fish stock

Salt and freshly ground black pepper
Directions
Cut a square of baking paper and another of tin foil, laying the paper square on top of the tin foil.
Place the cutlet in the middle of the paper.
Add some chopped vegetables - celery, courgette, carrot, broccoli, beans (whatever is handy).
Add the garlic and chilli.
Sprinkle on the couscous, drizzle with olive oil, add the fish stock and season.
Wrap up parcel and bake in oven for 15 - 20 minutes or until the fish is cooked.
Take out of oven, unwrap and serve still in the paper parcel with a good brown bread.
