Potted Crab Omelette
Ingredients

3 - 4 eggs

2 pots of Potted Crab

Handful of croutons

Chopped parsley
Directions
Separate the top layer of butter from the crab and put to one side.
Melt ¾ of the butter in an omelette pan.
Beat the eggs, season with salt and pepper and pour onto the hot butter.
While omelette is still slightly uncooked, sprinkle the crab meat on top.
Once firm, take off heat and add a handful of croutons and parsley to garnish.
Cut into 4 large slices and serve with salad and a hot crusty bread
