These gorgeous French bite-size savoury pastries just melt in the mouth. I served these gougères to friends with pre-dinner drinks and they were so impressed that I really didn't want to confess how effortless they had been to make
Ingredients

3 oz / 75g plain flour

¼ pint / 150ml water

¼ teaspoon salt

Shake of pepper

2 oz / 50g butter
-
2 beaten eggs
-
2 oz / 50g grated cheddar cheese

2 oz / 50g smoked salmon and trout trimmings, finely chopped
Directions
Sieve together the flour, salt and pepper.
Melt the butter with the water in a saucepan.
Bring to the boil, tip in the flour and beat with a wooden spoon until the mixture leaves the sides of the pan cleanly. Allow it to cool slightly.
Beat in the eggs until the mixture is smooth and glossy.
Add the grated cheese and mix well.
Add the smoked salmon and trout trimmings and stir through.
Spoon dessert-spoon sized drops onto a greased baking tray.
Bake for 30 minutes at 425F / 220C until puffy and golden.
