Smoked Trout Tortilla Verde
Ingredients

200g Inverawe Smoked Salmon or Trout

6 medium eggs, beaten
-
25g butter
-
1 medium courgette, grated

Finely grated rind 1 lemon
-
2 tbsp each of freshly chopped parsley, chives and tarragon

Salt and freshly ground black pepper

Wedges of lemon and fresh herbs to serve
Directions
Melt the butter in a medium sized frying pan and gently stir fry the courgette for 5 minutes.
Add the lemon, herbs and plenty of seasoning and cook, stirring, for a further minute.
Pour over the egg and cook over a gentle heat, mixing the cooked egg from the edge of the pan into the centre for about 5 minutes until the egg is lightly set all over.
Carefully slide the tortilla onto a plate, then return to the pan the other way up, and cook for a further 3 minutes.
Serve warm or cold, cut into 12 slices, topped with slices of smoked trout or salmon and accompanied with lemon wedges and fresh herbs.
