Our venison comes from local stalking estates near to our smokehouse. Low in cholesterol and a very lean meat, venison is gradually becoming more common on the menu which is a good thing and no surprise as it is a delicious meat. The unique gamey flavour stands up well to accompanying ingredients - a few juniper berries cooked in the gravy give an unusual and excellent twist. A little ground cinnamon also works wonders. A very versatile meat, it benefits cooked to rare and not overdone.
